The Texas Bucket List – Alvin Ord’s in San Marcos

When you roll into San Marcos, it doesn’t take long to realize this college town is booming. With more than 40,000 students at Texas State University, there’s no shortage of hungry folks looking for a quick bite. Lucky for them, just across the street sits a sandwich shop that’s been a staple since the early 1980s, Alvin Ord’s.

It may not look like much from the outside, but step inside and you’ll quickly understand why it’s stood the test of time.

“Pretty much your basic hole in the wall that’s just amazing,” said customer Kaycie Halatin.
“When the kids come here that are new, they right away fall for this place,” added customer Veronica Gonzales.
“Well, it’s one of a kind. It really is,” said owner Bill Martin.

Bill has owned Alvin Ord’s since 1983, and over the years, he’s served generations of Southwest Texas State alumni.

“It’s neat going around town and finding out how many people grew up on Alvin Ord’s,” said Bill.

For many, it’s more than just a sandwich shop. It’s a time machine.

Even for me, this place hits close to home. I grew up eating these sandwiches in Round Rock, and while that location is long gone, stepping into this one feels exactly like it did decades ago. The menu, the décor, and the atmosphere have all been preserved. “If you worked here in the ’80s, you could work here now,” joked Bill.

“Bill’s really old school and he hasn’t changed anything. If you look at the décor in here, this is not something we tried to do. It just happened,” said store manager Charlie Briganze.

Charlie, who’s been working here since 2014, says that authenticity is exactly what makes Alvin Ord’s so special. “To me, it’s one of the last independent mom-and-pop places that preserve the culture of San Marcos,” said Charlie.

“The thing I’ve done best is hiring good people,” said Bill.

But the sandwiches aren’t the only thing that have people talking—the story behind the name is just as legendary. “Okay, the story, as far as what I’ve been told,” said Bill, “there’s this guy named Alvin Ord Johnston that had a great sandwich in East Texas and everybody was telling him he ought to open something up.  So he did in Austin. As the story goes, Alvin Ord Johnson one time just left in the middle of the night with the books all left at the store and went to join a monastery. So the nephew decided to start something new and named it after his uncle, Alvin Ord. So that’s how the name came about.”

It’s a story filled with mystery and depending on who you ask, you might hear a slightly different version. “I’ve had people come in and try and tell me the story, and I’m like, ‘That doesn’t sound right. Bill told me something different,’” said Charlie. “There’s kind of a blurry area there and that definitely adds to the mystique.”

While the history might be a bit hazy, one thing is crystal clear, the sandwiches are the real deal and it all starts with the bread. “The secret is the bread. We have awesome bread baked from scratch every morning,” said Charlie. “Water, sugar, salt, yeast, flour… that’s it,” said Bill.

“How hard is it to cut perfectly a piece of bread like that?” I asked.
“I have a lot of experience, so not very hard for me,” Charlie joked.

The menu is just as simple as the bread, and at the top of the list is the fan favorite—the Salvation.

“Some secret oil on there… olive oil, butter oil, and some spices,” said Charlie. “We’ve got cheddar and mozzarella cheese… then we’re going to toast them up.”

After a quick run through the oven, the sandwich starts to come together.

“We’re going to put some delicious ham on there… two kinds of ham… and some salami,” said Charlie.
“Not heavy on the mustard… just a little bit… then back into the oven.”

A few minutes later, it’s ready for the finishing touches, lettuce, tomatoes, and onions. “It’s pretty simple. We don’t have a lot of special ingredients… it’s just old school,” said Charlie.

“This is when things were simple. You get what you get and you don’t throw a fit,” I joked.

Finally, it’s cut, wrapped, and ready to go. That first bite? It’s like stepping back in time.

That flavor is just fantastic. The bread is fresh baked with a crispy outer shell and soft center. The mix of meats, the melted cheese, and that signature oil all come together to make one incredible sandwich.

“I’m a big sandwich person, and it’s amazing every time,” said Halatin.
“They’re just really good,” said Gonzales.
“Just everything about it, I just love it,” added McNeil.

It’s pretty remarkable that something so simple can be so satisfying, but that’s the magic of Alvin Ord’s.

Well, Mr. Alvin Ord, wherever you are, God bless, and thanks for making a great sandwich.

“Students like supporting local businesses, especially now,” said Charlie. “People are realizing how important it is to support mom-and-pop places.”

So, if you ever find yourself passing through San Marcos seek a Salvation at Alvin Ord’s because this sandwich is a true blessing on The Texas Bucket List.
